With Halloween almost over, My favorite time of the year! "Thanksgiving and Christmas". 

What a better way to spend time with family and friends.   One thing many of us have in common during the holidays. 

Food.  We enjoy a delightful meal with family and friends. One thing that may be on the menu is a delicious pie or pies. We tend to over cook during the holidays. 

Here is a little piece of history: 

Historians trace the origin of pie back to ancient Egypt around 9500 BCE. The first pies were made with ground grains like barley, wheat, or oats mixed with water, creating a sturdy "dough." This was shaped into an oval and filled with savory ingredients such as nuts, honey, and meat, making pie an excellent way to preserve food and provide portable meals for workers and travelers.Other ancient civilizations quickly adopted and refined the concept of pie. The Greeks improved upon the Egyptian recipe by developing a flakier pastry shell. The Romans later embraced pie from the Greeks, with wealthy Romans filling their pies with various meats and seafood. They may have been the first to create pies with both a top and bottom crust, and as the Roman Empire expanded, so did the diversity of pie fillings, both sweet and savory. The term “pie” originated in medieval England, where it was called “pyes.” English pies were often filled with meats like beef, lamb, or duck, spiced with currants, dates, or pepper. By the 1500s, fruit pies began to emerge, and Queen Elizabeth I was famously fond of cherry pie.

Pie In America:

Contrary to popular belief, the pilgrims didn’t celebrate with modern pumpkin pie at the first Thanksgiving in 1621; they preferred meat-based pies similar to those back home. As colonists gained access to sweeteners like maple syrup and local fruits such as pears, apples, and pumpkins, sweet pies began to rise in popularity.

New England became known as America’s “pie belt,” with fruit and pumpkin pies becoming breakfast staples. Different regions created their specialties: the Midwest with cream and cheese pies, the Upper Plains with berry pies, and the South with sweet potato pie. Key lime pie became synonymous with Florida.

By the 1800s, pies were commonplace in America, but their popularity waned in the late 19th and early 20th centuries due to health concerns. However, the introduction of ready-made pie crusts and refrigeration revived pie-making, leading to the rise of chilled varieties like Black Bottom and Coconut Cream.  During the early 1800's pie was so popular in America. It still is today.  Many still honor the roots of pie-making, focusing on homemade crusts and locally sourced fillings.  Crafting thousands from scratch each year and hand-crimping every crust.
